Last night I made a really delicious casserole! My husband really liked it and kept saying how good it was. It was easy to make and didn't take too long to whip up. It does take awhile to cook, but it is really simple.
Here is what you need for this casserole:
1. 1 pound of Hamburger meat
2. 2 pounds Southern Hash Browns (any type hash browns will work though)
3. 1 stick of butter, or 1/2 cup butter melted
4. 3/4 to 1 cup sour cream
5. 1 to 2 cups shred cheese
6. 1 10 oz can of Cream of Mushroom Soup, or Cream of Chicken
7. Salt and pepper to taste
The first thing you will need to do is get your hamburger meat cooking. While the meat cooks, mix all of your other ingredients together. Make sure to mix everything really well. Also, I will mention it is good to let your hash browns sit out and thaw. It helps them mix better, and cook faster. Once you have mixed all the ingredients together, add them to your casserole dish. I use a 5 quart dish, but you can use a 9 x 13 but it will be full.
Turn the oven on to 350 degrees and let the casserole cook 35 to 40 minutes. you just need to make sure the hash browns have cooked thoroughly. You can either eat your casserole as is, or add another layer of cheese to the top and put it back in the oven for a few minutes to melt the cheese. After that, your casserole is done, and you are ready to serve!
This casserole is very good, and it feeds a big crowd. Add a few sides and you have a great southern meal! I love how simple and easy this is to make. So give it a try, and let me know what you think!

Vegetable Casserole
Need a quick and easy side dish? Then you have found the right place! Vegetable casserole is quick, easy, and very yummy!! It is one of my favorite side dishes, and it very easy to make more for a big crowd. I like to take this to our church dinners.
Here are the ingredients you will need for an 8 x 8 casserole dish:
1. Two 10 oz. cans of mixed vegetables. (For a 9 x 13 dish you need at least 4 cans).
2. Mayonnaise (about a cup, but really just enough to cover the vegetables in the bowl.
3. Shred cheese. (I love a mixture of Colby and Monterrey jack) About 1 cup
4. A pack of Ritz crackers.
5. Salt and pepper to taste.
Here are the ingredients you will need for an 8 x 8 casserole dish:

To begin drain your vegetables very well. The more water in bowl the less the mayo will stick to your vegetables, making them runny. Place the vegetables in a bowl, and coat with mayo. Then add a little salt and pepper, and your shred cheese. Once all the ingredients are well mixed, place the mixture into an 8 x 8 oven safe dish. (For a 9 x 13 add at least four cans of vegetables, and more mayo and cheese). Once your mixture is in your dish you want to evenly coat your vegetables with the crackers. For low carb diets omit the crackers, and cover with more cheese on top, or leave uncovered.
Place your dish in the oven at 350 degrees, and let cook for about 15 to 20 minutes. You want to make sure the cheese is melted. Once you take out of the oven, let cool for a few minutes, and serve!

Adrian's Recipe for Ranch Beans and Corn Casserole
I have made a few videos and I thought maybe I should get on here and share the directions! So here are the directions for making the Ranch Beans and Corn Casserole. My camera woman had the night off so my oldest son helped me (even though he wanted to play video games with friends). I had to finish the video for the corn casserole on my own, but it turned out ok. I just got to get some proper equipment. In other news it looks like I may be close to making 25 cents on my videos!! Just a few more views lol.
1. Ranch Beans - This is a really easy dish with four ingredients!
For this dish you will need:
1 pound of hamburger meat
1 28 oz. can of baked beans
1/4th cup bbq sauce (or a little less depending on how you like it)
1 cup and a half of shred cheese
Cook your hamburger meat until cooked all the way through, no pink! Drain your meat and then add in the beans, and BBQ sauce on a medium heat. Mix together and let simmer a few minutes. Next you can add cheese to the top of your pan, or put in a 9x13 dish and stick in the over for 5-10 minutes.

2. Corn Casserole - This dish is not that hard, but it does require more ingredients, and a lot of time.
For this dish you will need:
1 Box Jiffy corn meal mix
1 10 oz can of whole kernel corn not drained
1 10 oz can of cream style corn, also not drained
8 oz of sour cream (can substitute with 8 oz. cream cheese)
2 eggs
1 stick melted butter
1 and a half to 2 cups of shred cheese
Get a medium to large bowl and mix all your ingredients except the cheese. Mix very well until all of the Jiffy mix is saturated, and the eggs are well blended. Then spread the mixture into a 9 x 13 Pyrex dish (I spray mine with non stick coking spray). Place the dish in the oven heated to 350 degrees. Let the corn casserole cook for 45 minutes. After 45 minutes, pull the casserole out, it should look like a cake. Cover the casserole in the layer of cheese. Place the casserole back into the oven and let cook for 10 to 15 more minutes. Once the cheese is melted, your casserole is ready! This will be very hot. I like to go ahead and cut mine into squares and let it cool a little before serving.

Adrian's Cooking! Chicken Spaghetti Recipe.
It's been awhile, but I am back! I have started a cooking channel on YouTube, and I wanted to link it to my blog. This way I can share recipes and you can let me know if there is something you would like me to make.
The very first recipe I made for my channel is one of our favorites called Chicken Spaghetti. this is so an easy meal! You can make small portions, or make it for a crowd. It does not require a lot of pots and pans, and is an easy clean up. You can also cut down on the cooking by purchasing canned chicken. You can also spice things up by adding ingredients such as corn, hot Rotel, cream of chicken, or sour cream. I tend to try and cook simple meals for my picky eater, and also to save time.
Here is the recipe:
This makes a large 5 quart serving, and is great for a crowd.
1 Pound Angel Hair Pasta
1 and a half large chicken breast
1 small can of original Rotel
2 to 3 cups of shred cheese (I love Colby and Monterey Jack)
Salt and Pepper to taste
That is it! You can't get much more simple that that.
First I cook my chicken, and then I dice it up. Next I boil my pasta and then drain well. Put the pasta back in the pot and stir in the Rotel and a half a cup of cheese or so. Add in your salt and pepper, and take a taste of all ingredients to make sure it taste OK to you. Next I pour in the pasta mix into a large 11 x 15 (5 quart dish) and cover generously with cheese. Put in the oven at 350 for about 10 minutes until the cheese is well melted over the pasta.
